Vanilla Cake

Every time I see a vanilla cake recipe they all claim that it’s the ‘best vanilla cake’. Can I guarantee that this is the best…..absolutely not. Butttt I will say this is one of the easiest to make. I’ve been using this recipe for years now, it easy to make, tastes good and it’s very much soft and fluffy. I hope you like it!

Vanilla Cake


  • 125g unsalted butter

  • 125ml vegetable oil

  • 250g granulated sugar

  • 2 tsp vanilla extract

  • 4 eggs

  • 250g self-raising flour

  • 4 tbsp warm milk


  • start by greasing 2 six inch cake tins, then line the bottom of these tins with baking paper. at this point also pre-heat your oven to 170c/325f
  • in a large bowl, add the softened butter, oil, sugar and vanilla
  • beat these together for 5 minutes
  • add in 2 of the eggs and mix until the mixture is smooth, then mix in the other 2 eggs
  • now just add the flour and milk, then mix until you get a smooth batter. as soon as the batter is smooth, stop mixing, you don't want to mix this for too long
  • pour this into the tins then bake them for around 45 minutes, or until a toothpick comes out clean
  • let the cakes cool for about 10 minutes before taking them out of the tins and then you're done!!


  • you can use plain flour/all purpose flour for this. just use the same amount and add 2.5 tsp of baking powder
  • these cake layers freeze well. every time i decorate a cake i always like to use frozen cake layers, it just makes it easier because there's less crumbs everywhere
  • if you want to freeze the layers, after they're baked let them cool in the tin for 10 minutes then take them out, wrap them with cling film well and then throw them in the freezer. i would recommend only keeping them frozen for about a month, the taste and texture will not be affected. when you want to use them, just take them out, fill and decorate them, by the time you're done decorating they should have defrosted!!
